Dorie Greenspan has a new book about cookies that has gotten a lot of acclaim. I haven't read it, but I love her other books. It's called Dorie's Cookies. Obviously not particular to American Christmas, but I bet it has some great Christmas cookie recipes.
Any edition of the Joy Of Cooking has sections on Christmas baking, especially cookies. I am especially fond of the older books--1964 is charming, offering an extensive recipe for a gingerbread house. I have six editions of Joy, and all are wonderful.
I second the recommendation of Joy of Cooking. Never saw the 1964 edition, but swear by the 1975 one.
Rose Levy Beranbaum, Rose s Christmas Cookies, 1998. Havent cooked out of this one, but yes her Cake Book and others make absolutely reliable and delicious baked goods.
