Chicken en papillote

I'm making Mediterranean chicken en papillote for dinner (Martha Stewart's recipe) and I was wondering, can I make the packages ahead of time and leave them in the fridge overnight, and just pop them in the oven the day of? How long would they last in the fridge?

I have done this before with salmon but never overnight but up to 6 hours ahead. I don't see why it wouldn't work unless what you put in the package is very wet,(e.g. wine or stock). If using potatoes they may discolor...
