I'm not sure what recipe you're using, but you might need to tweak the recipe to turn it into a loaf. The author of these pull-apart rolls (https://food52.com/recipes...) said she based it on her challah recipe, which I found here: http://soursaltybittersweet...
I recently made Alexandra Stafford's Peasant Bread (http://www.alexandracooks...) and that has an variation to make as rolls (http://www.alexandracooks...).
