when you say Leave Overnight, you mean on the stovetop/not in the fridge, correct?

Yes, leave on the stovetop or countertop at room temperature. Ambient temperatures around 70 degrees are best for the miso to do its fermentation action on the oats. My kitchen is considerably colder than that and it still works fine though.
