If I start boiling smoked ham hocks while they are still frozen, will they taste different if I would have let them thaw out natrually?

it shouldn't affect the flavor, but it sounds to me like it was overcooked. i make soup a lot, around twice a week. i often start with frozen meats and i have never cooked it for more than 2-3 hours.

In the absence of additional information, I would venture to say no, they should not taste different...

Should be fine if you bring the water slowly to a simmer. Don't plunge frozen ham hock into boiling water.

You're so right! you need more information, so here it is. I've been eating sandwiches for about 33 years. Needless to say, I can't get pass boiling water. And that's the truth! A friend of mine told me he's a 5 star soul food chef. That turned out to be a 5 star LIE!!! I wanted him to prepare a meal of smoked ham hocks and white lima beans. He placed 6 frozen solid ham hocks in a pot of warm water. Then he turned the heat up. Two (2) hours later, he then put in cut up onions and vinegar. Four (4) hours later, he said they were done. When I lifted the top off, I almost had a cardiac arrest! There was nothing on the bone but SLABS OF FAT!!! All the meat was shredded off. If there was a law for violating food recipes, he should get LIFE WITHOUT PAROLE! I was devastated, to say the least. This has been a life long favorite recipe for me. My mother use to prepare this meal for me at least once every two (2) months for many years. And the smoked ham hocks were ALWAYS fully together. Food today is simply to costly to be experimenting with. Especially, when you've never really cooked anything in life. Can you please help me? I was trying to cook smoked ham hocks with white lima beans. Unfortunately, a friend of mine, who claims to be a 5 star chef, is nothing but a rotten joke! He placed these frozen solid ham hocks in warm water. then turned the heat up! Later, my ham hocks totally fell apart. They were so shredded, after being cooked, there was nothing left. But bone and fat. What a waste!
