Undercooked a leg of lamb in the oven last night.  Left it in the fridge overnight, now am using the meat in a stew.  Should the meat be safe to eat?

People are sometimes reluctant to answer these "is it safe" questions because you never really know the whole situation, but as you have stated it, it shouldn't be a problem.
