Chef June, thanks, too, for your response. I went to the recipe you posted. It sounds de-lish! And, it received so many rave reviews in the comments. I saved the recipe as a "must-try" in the future.

This recipe (in a column from cooking teacher Bonnie Stern) is from Chef John Ash, using herbs and pistachios as a crust. Originally written for veal pot roast, but I have also made (and loved) it with lamb shoulder roast and rolled turkey breast...adapts just fine.
If you like the flavors, you may want to use it for your leg of lamb.
