This may be too late, but I usually cook chicken and sweet potatoes for 10-12 minutes. I wouldn't dice the potatoes too small; I cook halved sweet potatoes for 10 minutes so if they are diced too small they may fall apart. Honestly though, I have not been real impressed with chicken in the instant pot. You definitely need to release the pressure as soon as it is done with chicken or it dries out.
