Yes, fresh yeast. Some say it taste better than active dry yeast and some say it's not true. Let yourself be the judge! I personally think it has a better outcome flavor wise. And yes, Moms who baked before active dry yeast was was popular used fresh yeast. Although, I hear it can be hard to find.
