vegan rosh hashanah dessert recipes that travel well? sending a care package to my college kid - the vegan part is kind of tricky :/

ANZAC COOKIES. they are made for this purpose. also most honey cakes, if baked in a small vessel, will travel well, if wrapped carefully.

both are delicious but sadly neither are vegan :( but i wonder if you could sub coconut oil for the butter in anzac biscuits?

just wanted to update with my solutions - baked a water challah, vegan applesauce cake, vegan chocolate cake, plus date honey and an assortment of apples. all arrived in fine shape and apparently tasted great, just in case anyone else ever needs to mail vegan baked goods :)

Not entirely pure vegan, but We used to make sesame/honey candies --kind of like a date ball--as a high holiday treat. Maybe you could substitute molasses and/or agave syrup? I don't have the recipe we used,but I imagine an internet search would turn up something similar.

Various chocolate treats (truffles, bark) if you can ship fast or avoid heat
Coconut and/or carrot treats
Halva (plain, pistachio etc)
Dried fruits or fruit leather
Granola
...
Not particularly associated with Rosh Hashanah, but yes vegan, hope these ideas help
