On the Whole Foods website, there is a recipe for Coconut Fudge, using coconut milk. It is FANTASTIC, more of a truffle like density than a fudge. I've made it three times now for my fiance's family, they keep asking for it!

Poached or roasted pears are delicious and very easy. You can make a chocolate or raspberry sauce to go along, or a spoonful of raspberry sorbet.

I love, love, love vegan chocolate pudding--the kind made with silken tofu, melted vegan chocolate, and almond milk to even out the consistency. Make that and put it in a salty crumb crust (made with vegan margarine or coconut oil instead of butter) with roasted peanuts, and you'll be queen of the potluck!

I would imagine that any crumb crust recipe, made with vegan cookies and Earth Balance, will suffice here.
