Post-marinating roasted chicken

I didn't ask the question yet! Here it is:
I roasted a chicken with lemon, garlic, and rosemary yesterday - would like to use some later in the eek fir a shawarma - can I pull some of the already roasted meat off the chicken and marinate it in a nice yogurt sauce, then re-roast it for a few minutes to get the additional spices and texture I want for shawarma?

The yogurt sauce sounds good but additional roasting is probably not. Warming it through should suffice.
