Curry.
Lazy me, I just fiddle with the recipe on the side of the jar of curry paste (red, green or yellow, depending on the available vegetables). A can of coconut milk is handy.
I like to cut roasted chicken into bite sized pieces, throw it in a pan with a little oil and sprinkle on some chile (or whatever you prefer), and then make tacos topped with lettuce, fresh cilantro and a little lime juice. Tasty and very simple!

I always make an open faced chicken sandwich with leftover chicken. Little gravy, chicken, cranberry sauce over some toast. If you don't have that a little mayo and cold chicken on a sandwich of toasted bread.
