My porchetta has fennel seed (and fronds) in it. If yours does too a nice accompaniment would be Ina Garten's Potato-fennel Gratin. It is absolutely delicious and is available on the Foodnetwork site.
I think any sort of dark or bitter green salad would be very nice.
