I'd ask someone who runs a taco truck. My impression is that boneless pork butt, especially when cooked down to carnitas, yields much less per pound than other meats.
I asked a friend who had a taco truck cater a big party; they recommended 3/4 pound per guest. I should add, however, that those carnitas were altogether delicious, so people wanted as much of it as they politely could get . . . . ;o)
If you plan on a serving size of 5 oz and expect shrinkage during cooking of 25%, you're going to need a little more than 70 pounds of raw pork butt. Good luck.
