Hello everyone!! Today I made this basic white bread for the first time. Crumb is soft but chewy not airy. Why?

Please provide a link to the recipe.

Also, what is the protein content of the flour you used?

All purpose flour + vital wheat gluten

Try the recipe again without the additional vital wheat gluten, and see if that gives you the crumb you want.

Looks like the dough did not get a long enough proof. What recipe did you use?
