Made scalloped potatoes but had to pull out after 20 minutes. They have been in frig, and now there are brown puddles. Why?

I did put parchment on top and then foil before putting them in the frig. Are they harmful? I used onions, gouda cheese and a white sauce. Potatoes were totally white when I peeled and sliced with mandolin.

Enzymes reacting. Next time do not assemble until ready to put in oven. Sliced potatoes can be placed in iced water, covered completely.
