I'm making spaghetti w/ground beef and I have a lb of ground antelope meat I would like to use. Can I do this?

I have only cooked with venison once. My hunter friends suggested it for many things but also suggested red wine to tame any gamy flavor which would work well with your sauce.

Wild game tends to be very lean, but there's no reason you can't add more fat. I've never done this with antelope, but it works fine with venison.
