Sure, I've done stir frys/sautés with bell peppers and shrimp before.
Bell peppers take longer to cook than shrimp, so start the peppers first, then add the shrimp toward the end since the latter really don't need too much time.
If you use multiple colors of bell pepper, it makes for a very pretty presentation.
Red/Orange/Yellow or Green? Green ones have a slight bitterness since they are unripened. The colored ones are ripened and sweet. Either should go well with shrimp.
