What type of pork should I use?

Minced pork really is another term for ground pork. I would think, if you are grinding your own meat, that you would choose a fattier cut - such as shoulder and would not use tenderloin. The ground pork prepackaged at the store is always made from fattier cuts of pork and is ideal! I hope that helps, just my two cents:-)
