Alternative thickeners for custard cream?
Is there anything I can use instead of cornstarch and wheat flour? Would arrowroot powder work?
Also, I thought arrowroot powder was a 1:1 subsitute for cornstarch, but recently read it should be 2:1. Which one is correct?

One source (Food Substitutions Bible) says to replace cornstarch use
*arrowroot 1 to 1.5x
*tapioca 1.5 to 2x
*potato starch, rice starch or instant mashed potatoes 2/3x
Obviously, the mashed potatoes are more for savory dishes; the others can go into sweet or savory.
