Homemade marshmallows drying out (made in July). How can I repurpose them into a new dish?

PS I remembered that Nigella Lawson uses marshmallow in many of her dessert recipes - grasshopper pie, rocky road, chocolate mousse, maybe even a pavlova. If you like the sound of these, have a look around.
