How far in advance think make homemade Oreos?

I am making homemade Oreos for July 4 bbq but really busy weekend ahead and would like to make today while kids at camp. Recipe says can keep for a week but never made these before. Thoughts?

Make the cookies but don't fill them. The longer you can hold off on filling them, the crispier the cookie.
