I was gifted a fresh turkey today. I'll brine it for 2 days prior to cooking, which is on Saturday. Should I freeze/thaw between today & thurs?

Hi Terry,

According to USDA guidelines, fresh turkey should only be in the fridge for 1-2 days before using it—meaning, you should freeze it, and then take it out with enough time to defrost in the fridge (figure 24 hours for every 4 to 5 pounds).
