How do I keep roasted vegetables crispy in a 30-minute ride? Solutions? Panko?

Last few years I have roasted veggies for my in-laws potluck style Thanksgiving dinner. They've always been a hit and always been requested because of flavor. However I noticed that they're not crisp when I get there. it is super irritating because I know they're not as good as they could be. Can I try adding something like panko at the end to help absorb the liquid or anything else? Or should I do something else?

I've read that tossing vegetables with a bit of arrowroot powder before roasting will help crisp them up, but I've never tried it myself.

Best & only way I know: borrow the in-laws oven for about 15-20 minutes on high heat to warm them up and restore the crispy texture you first created.
If that's impossible, make another vegetable dish they love or that you want to introduce to them...
For crunch, I might go for: root vegetable pancakes (potato, carrot, parsnip and/or sweet potato); stuffed mushrooms (button or portobellos); fennel salad.
