I'm roasting a variety of vegetables for Thanksgiving: squash, carrots, parsnips, and beets. How long should each be in the oven for?
I was planning on roasting at 400 F and keeping each veggie separate so I could pull them out when done. Just hoping for an estimate!

I think we could probably go down the list and determine the precise time for each veg but honestly these are all so similar that I would probably just cook them all for the same amount of time (40 to 50 minutes)
The squash might be a little more done but that just adds more caramelization and sweetness.
