I usually put leftover ham slices in a regular old zip locking bag, and they stay just fine. For longer term storage, I prefer to divide up the ham into meal size portions in vacuum pack bags. You can freeze it just fine, and have it on hand for future meals and use that way. They usually have enough water and brine injected in the hams that moisture loss isn't a problem, except in overcooking.
