"Cookies" covers a huge amount of territory, so there's no definitive answer. Most of them are best stored at room temperature in well sealed containers. Most of them freeze very well as they contain little moisture. Some cookies- a lot of bar cookies and brownies, for example, are best individually wrapped in plastic.
