For the "later" portion of the recipe, do you suggest just making chicken however you please and pouring the sauce on top?

You could certainly do that, and enjoy a second round of butter chicken. If you wanted to change things up, you could also try that sauce with salmon, shrimp, tofu, mixed vegetables, just about any firm white flesh fish, or turkey breast slices. The sauce is wonderful with all of those things, and it's one of the more popular lunch entrees I do for my family. Having the extra sauce on hand makes it really easy.
