What are the soya chunks? Are they dried dehydrated kind you keep in a cupboard? I think a smaller size kind of soya chunk- often labeled in the US as TVP pr texturized vegetable protein- will work best for a biryani.
If they are dried you need to soak for about half an hour to an hour, it’s best to use a flavorful liquid like a vegetable broth. Drain any excess liquid that is not absorbed while soaking.
