Here in Canada a piece of bacon would be another way of saying a slice. In North America bacon is generally sold sliced in 1 pound packages, and the average slice is about an ounce, or 28 grams. Not sure you need to be super accurate for this recipe since basically the purpose of the bacon apart from flavor is to provide some fat, and the amount of fat per slice can vary.

Oh Robyn you're brilliant thanks so much. My 16 year old sent a request for this for dinner but that description had me baffled. I Australia we'd call that a rasher.

Since your average pork shoulder is about half fat and smoked flavor is not traditional with carnitas the bacon is probably best skipped.
