1000 gms flour
840 gms water
15 gms salt (classic proportion would be 2% or 20 grams)
3 grams active dry yeast
50 grams olive oil.
My best estimates, since flour is typically 5 oz or 140 gms per cup. Water is 240 gms per cup. Kosher salt depends on brand, but typical bread doughs use 2% salt. Yeast is 3 gms per tsp.
