For Spinach Paratha's you could combine them with some finely grated paneer cheese (to absorb the water that seems to continously leak out of the leaves & to give it some body )when rolling out the paratha's, the spices can be the same.. works great)
Or else for the non stuffed version, simply puree , add the spices & incorporate into the roti dough.
