Parathis: I'd like to make some stuffed with spinach. Can I simply substitute the spinach in a recipe for cauliflower parathis? Thanks! ;o)

The chopped spinach needs to be wilted before its added to the stuffing ingredients, else it tends to cook unevenly when the paratha is made.

For Spinach Paratha's you could combine them with some finely grated paneer cheese (to absorb the water that seems to continously leak out of the leaves & to give it some body )when rolling out the paratha's, the spices can be the same.. works great)
Or else for the non stuffed version, simply puree , add the spices & incorporate into the roti dough.
