Bolognese sauce ready too soon.

Bolognese will be simmering for 3 hours and then 3 hours before serving. Cool and refrigerate? Keep simmering? Just leave on stove? And I am bringing it to someone else’s to eat!!! Thanks

By the time it is cool enough to refrigerate, honestly, you may as well have left it on a low (very low) simmer. The flavors will only concentrate more deliciously, and if need be, you can always add a bit more water or wine. That way, when you get to your event, it will require simply a quick re-warm and be ready to serve. Wish I were going to be there!
