Wonderful prepared as directed, but has anyone used chicken pieces and roasted the chicken on a large sheet pan to make this for a crowd?

Why not? As long as the bone is intact, your chicken should be moist. I like to pour some chick broth in pan, and mix olive oil,melted butter, lemon juice, herbs and pour over as soon as it hits the oven. Slices of lemons on top. Anything to add to the flavor of lemons.
