Is it ok to make this the day before thanksgiving?

Yes. I'd watch it carefully while baking, to make sure it doesn't get too brown. Then, I'd cool it, cover tightly and refrigerate. I'd let it come to room temperature before heating through at 350 Fahrenheit, baking until the top browns. ;o)
