Ras el Hanout (you may also see ras al hanout) is a spice mix essential to some northern African food, most especially tagines.

True ras al hanout contains rose petals. The American versions I’ve seen do not, so it’s worth searching out an authentic one. Amazon sells the Al Fez brand which I use.
