Another way to halve a recipe of baked goods (if you know you like it):
• make the whole thing,
• freeze half for later,
• use half now.
This works for raw and baked scones, biscuits, bread, cookies.
Also for baked (unfrosted) cakes and muffins.

Nancy and I think alike! Why half a recipe for one use when for only a bit more work (for the second half of the batch) you can do an encore performance. I do this all the time, with not only baked goods, but soups, sides and entrees that I know will freeze well. Very comforting to be able to pull a loaf of bread, bagels or dessert out of the freezer on short notice.

Hey there! Here are the ingredient quantities halved:

1 1/2 cups all-purpose flour
2 tablespoons sugar
1 1/8 teaspoons baking powder
3/8 teaspoon baking soda
1/4 teaspoon kosher salt
1/2 garlic clove (or 1 very small clove), minced or Microplaned
1/2 teaspoon lemon zest (about 1/2 small lemon)
6 tablespoons unsalted butter, cubed, cold
1 1/4 cups baby spinach
1/2 cup crumbled feta
2 scallions, finely chopped (heaping 1/4 cup)
1/4 cup chopped dill
1 small pinch freshly ground black pepper, plus more for topping
1 small pinch red pepper flakes
6 tablespoons buttermilk, plus more as needed
1/2 large egg, beaten with a fork
1 pinch flaky salt

This would yield 4 scones. You should still pat out the dough to be 1-inch thick and they'll bake the same amount of time.
