Do you have a measured amount for the lemon zest? " 3 lemons, zested" is vague as lemons can vary in size quite a bit.

Sometimes (especially for produce) recipe developers use measurements from the market.
If they seem vague or approximate, it's because they are and that's ok for that particular recipe.
The ones that drive me mad depend on unknowable commercial packaging from another era or another country (e.g., one small can of mushrooms, one container of yogurt).
In this recipe you need fresh lemon juice for the curd...before you do the squeezing, pick three fruits that look average and grate zest from them before you make the juice.

Still not helpful. An Average lemon in my region might be something like a 300g lemon, while the average lemon for the recipe maker could be a 500g lemon, making our lemon zest amounts different enough to cause my bars to taste bland. I'd rather avoid making a BUNCH of them only to find out I've just wasted several dozen eggs and several pounds of butter just to find out my lemon curd barely tastes of lemon.
