My wife is vegetarian (I’m not) and I was wondering if there are any substitutes for the chicken. Tofu, perhaps? She’s fine with chicken broth, just not the meat.
If I wasn't eating meat in this, I'd make the soup as directed, and top with crispy tofu and crushed cashews when serving. Peanuts might work too but I'm not sure that would go with the fennel and cashews are more mild tasting.
