Food safety: meat sauce. I finished cooking at 5 pm and forgot to put it away until 9Pm. Is it safe to eat?

Probably. You wouldn't have wanted to put it in the 'fridge hot anyway -- it had to cool down, yeah? Other than that, there are too many variables to make a call. Did you use the same spoon to taste it as to stir it? That adds heaps of nasty bacteria to the batch that grows like topsy. Anyway, it's probably ok.

Is this a spaghetti-type tomato-based meat sauce? If so I would say you are OK as you will be reheating it before using again. You may want to simmer a bit longer than you normally would, though.
