Ingredients question for scallion rolls

Why do you add sugar if this if a savory recipe? Is it impacting the dough somehow if I do not add sugar? Thank you

I think the sugar brings out the sweetness in the scallions. Probably would not hurt to omit the sugar.

Tatiana - if you need or want to dutch the sugar, go ahead.
How it functions in savory bread? Helps yeast grow, develop gluten threads, browning of crust, holds moisture.
If you don't need to dump all sugar, use one tbsp to get some benefits.
