Substituting butter in a recipe

I'm thinking about making a recipe from Half Baked Harvest and it calls for 3 tablespoons of butter. I'm trying to reduce my cholesterol so I want to substitute olive oil for the butter. Your choice on flavor - olive, avocado grapeseed oil etc.
On volume, use 80% of butter in recipe, as most butter sold in grocery stores is only about 80% fatm
