Alice - There's a wide range of recipes (all over the web and here at food52) for vegan potato salads, casseroles, pancakes, soups, burgers. Maybe you already use mashed potatoes in baking. If not, they are great for adding moisture and texture to both breads and cakes. Hope these ideas help.
