What is the ideal internal temperature for filet mignon medium rare?

140 degrees is your goal.
For anyone reading this - It is a very lean cut of meat therefore I would not go past medium as the risk of it being dry is too high. After cooking remove from heat, tent, and then let the meat REST! At least ten to fifteen minutes. I know you didn't ask for that last piece of advice but it's crucial! Just thought to include if others reading may want to know.
Too much mullah for this cut not to be perfect!
