Apple interchangeability in recipies

Can I use granny smith apples in recipies calling for macintosh, golden delicious or Gala apples?

Macintosh and Cortland apples don't turn brown nearly as fast as other types. That is why restaurants use them in salads. Golden delicious are mushy to begin with. I wouldn't bake with them at all. I bake with the Galas all the time...🙂

The thing to consider is that some apples are not for cooking/baking. They break down to a mush when cooked or baked. Here's a handy-dandy guide to what kind of apples to use for what kind of cooking/baking.

Probably. You might need to add more sugar since Granny Smith apples are tart and not as sweet as those other apples.
