What sort of ham are you interested in? A wet cure or dry cure ham? Or perhaps you call them city or country hams. They are two different types, and companies will usually specialize in one or the other. One thing to consider, before you decide to go mail order, is checking with small local butcher/processors. A good many of them produce hams of their own, of impressive quality sometimes. The nice thing about that would be you could probably taste test a bit before committing to a large hunk of meat. And if you are not above a little adventure, you can make your own wet cure- brined ham at home. It isn't as difficult as you might think, and then you get to decide what flavorings you prefer.
I have heard great things about the New Braunfels Smokehouse in Texas. They have mail order. Smoked sausages are great, but I have not had their smoked ham.
