Freeze longer? Can I do that? How long can these stay frozen?

I’m interested in baking them on an “as needed” basis, one at a time, so I can have a fresh one whenever I want.

That is a great idea. :) You can freeze these, wrapped securely, for up to 3 months. Ensure as little air inside your container/resealable bag as possible, pies arranged flat, in layers as needed, each tier lined with parchment inside container/bag.
