Can I use instant if I don’t have active dry yeast and just not proof it in water/just add to the dry ingredients?

Hello Ana, yes, you can. If you are using Instant yeast, you can add it directly to the flour but I won't put it next to salt, so I would mix the flour with salt until well-combined first, then add the instant yeast. Yes. Absolutely. All yeasts are a little different but feel free to use it like Active Dry.
