Pairings for Jacque Pepin's cheese souffle?

Of course, I'd love to just spoon pillowy, custardy piles of cheese into my mouth for dinner (and maybe I'll do just that but what about the others...), but what proteins/vegetables have people paired with Pepin's cheese souffle?

If you serve small portions, a souffle can be a starter before a meal with a main and sides (fish, meat vegetarian menu....your choice).
If you serve larger portions, with a souffle as main, it is often served with a tomato soup and a salad, or salad and sausages.
